Parkview Regional’s foodservice operations were designed to be versatile and robust to serve the 446-bed facility. Originally, C&T was contracted to procure equipment and provide installation services for the prep areas, production kitchen, bakery, remote refrigeration system, servery, dishrooms, a small café, and a physicians’ lounge. Once the project was underway, Parkview tasked C&T to redesign the room service area to cut costs and provide a more efficient flow for tray preparation for delivery to patients, 24 hours a day. The room service area became two identical lines mirroring one another with an adjacent area for tray assembly. The kitchen’s production, prep and room service areas were designed to allow for flexibility; equipment can be easily and quickly switched out to accommodate changing menus. Parkview is C&T’s largest project to date.
