When Eskenazi Health began construction of a brand new 315 bed complex in downtown Indianapolis, C&T had been involved from the planning stages. We took on the role of foodservice consultant, working with the architect, contractors, and hospital representatives to design Café Soleil, a forward-thinking, unique approach to healthcare dining in the oldest and largest public health care system in Indiana. In an effort to move toward healthier options, Eskenazi’s Culinary Services team worked with C&T to implement a design that replaced fryers with combi ovens and ranges to allow for more scratch-made dishes using locally-sourced ingredients. C&T was also awarded the contract to provide the equipment. Due to Café Soleil’s popularity, the healthy food bar was added later to take stress off the kitchen.
